Sawafuji Hon-yaki Mirror Finish Gyokuhakuko All Steel This is a Hon-yaki yanagiba knife. The current blade length is about 26cm. It comes with a magnolia wood saya (sheath). I am an amateur cook, but I wanted to experience the hardness of Hon-yaki, so I bought it a few years ago, even though it was expensive. It's difficult to sharpen, but once the blade is sharp, the sharpness lasts a long time. Since I'm an amateur sharpener, I don't think I've brought out the true sharpness of the knife. Compared to stainless steel knives, it rusts quite easily, so care is required when handling it. For those who are interested in Hon-yaki knives but find them too expensive, why not give this one a try?
