This is a rare phōkin (gunmetal) tempura pan from Hirai Chūzōsho, which is no longer in production. It has the "平" (Hirai) stamp on the back. It seems to have been sold at Aritsugu in Kyoto. Due to rising material costs and a shortage of craftsmen, phōkin pans are no longer made, and their distribution has decreased. Phōkin is a metal made by combining 90% copper and 10% tin. It excels in heat retention and heat conduction, making it suitable for tempura, sukiyaki, as well as other nabe dishes such as mizutaki, okisuki, and shabu-shabu. The plate thickness is about 2mm, so it is very durable. While there is a sense of use overall (fine scratches, blackening), there is no noticeable damage. This is a high-quality pot that you can use for a long time.
