These bamboo shoots were grown in the mountains of Oita, where the water and air are clean. They were harvested and immediately boiled with rice bran and sun-dried. This is from the autumn harvest of Reiwa 5 (2023). They are great for simmered dishes, and also delicious in kinpira (sauteed with soy sauce and sugar) with a nice, crunchy texture. Highly recommended! (⌒‐⌒) Since these are from last year, I've increased the quantity and lowered the price. They may have darkened slightly, but as they are dried, the taste is not affected.
