About Shochu "Mori Izo" "Mori Izo" is made by carefully polishing selected Kogane Sengan (sweet potatoes), using underground water naturally filtered through the shirasu plateau of the Takasumi mountain range, yeast from the brewery, and the traditional techniques and methods of "kame-tsubo brewing" passed down since its founding in 1885. Due to its small production volume, it is difficult to obtain and is known as a phantom sweet potato shochu.
