This is a TOJIRO PRO Yanagiba knife, 240mm. It has been maintained with Fujijiro's sharpening service (and has not been used since). The blade uses molybdenum vanadium steel, which is highly wear-resistant and rust-resistant. It has an asymmetrical handle that replicates the grip of Japanese knives. The single-sided tornado pattern provides a non-slip grip even with wet or oily hands, supporting comfortable cooking.
