This is an Aritsugu hamokiri knife. The blade length is approximately 21cm. The steel type is unknown. The handle is made of buffalo horn. It has a special engraving. The steel of the cutting edge shines beautifully after sharpening. I polished the flat and cutting edge, resulting in a near-mirror finish. The shape of the hamokiri knife and the balance between the cutting edge and the flat surface are also beautiful, which is what you'd expect from Aritsugu. I repaired rust and scratches, but some minor scratches and rust marks (pitting) remained after the mirror finish. I recommend it if you don't mind. It's generally clean and a user-friendly size, so I recommend it for both professionals and home cooks. The knife has been finished with Kitayama 8000 grit, Shapton 12000 grit, and natural whetstones.
