First, pour hot water into the teapot to warm it up. (Warm all the teaware; this is fundamental.) 2. Next, transfer the hot water to the tea sea (pitcher) and warm the tea sea. 3. Similarly, warm the tea cups (chahai). 4. Add tea leaves to the gaiwan. 5. Then, pour hot water from a slightly higher position (to allow air to incorporate and the tea leaves to open). 6. Cover the gaiwan and wait for the brewing time. (The guideline for the first infusion is about 10 seconds.) 7. The tea brewed in the gaiwan should not be poured directly into the teacups; instead, transfer it to the tea sea first to even out the flavor.
