This is a Laguiole sommelier knife that I fell in love with and purchased in Paris 25 years ago. The engraving on the metal part, "LE TAILLEVENT," refers to a historic restaurant in Paris, France, which maintained three Michelin stars for 33 years from 1973, and was one of the most difficult restaurants to get a reservation at. This knife is a rare item, a double-name collaboration between Taillevent and Laguiole. It seems they are now called Forge de Laguiole, perhaps to avoid confusion with Chateau Laguiole.
