This is a custom knife, a gyuto and sujikiri hybrid, made by Fusachika. The blade length is approximately 28.5cm. The steel is Swedish steel. It is made entirely of steel. The handle is metal. This is a re-listing of a gyuto I previously offered, but I have significantly modified the shape. I corrected the blade line by about 5-10mm from the base of the blade, as it was uneven. I narrowed the blade width and widened the cutting edge, aiming for a balance between a gyuto and a sujikiri (slicer). What do you think? I believe it has become a shape that is easy to use as a gyuto or sujikiri. The blade has a certain thickness, but it flexes to a reasonable degree. After polishing the handle, I applied a beeswax treatment, so it should be water-repellent. Both the cutting edge and the flat surfaces are almost mirror-finished. The weight and balance are good, and the size makes it suitable for professionals and general households alike. The blade has been finished with a Kitayama 8000 grit stone, a Shapton 12000 grit stone, and a natural whetstone.
