This is a Kiritsuke-style Yanagiba knife with a blade length of 16cm from tip to machi (heel). Originally, it is a rare piece processed from a 6-sun (18cm) Yanagiba knife. It is easy to use for sashimi, peeling, chopping, and preparing small fish such as kohada, shinko, and kiss, as well as for cutting haran (Japanese ornamental leaves). It is versatile. Judging from the sharpening feel, the material is probably Shirogami #3, or at best Shirogami #2. I apologize that I cannot definitively say, but please consider this as a reference. The steel is easy to sharpen and has a good initial sharpness. When sharpened, it is characterized by a balance of tenacity and sharpness. The handle uses an octagonal handle made of Japanese magnolia wood. As you can see from the product images, it has a mirror-like luster due to the buffing finish. It is more resistant to rust than ordinary steel knives. Although it is a beautiful item, it is not completely new and unused, so there may be minor scratches or storage marks.
